Chicken Fajita’s!

Say hello to a super easy and yummy fajita night with the family!! I’m super excited to share this meal with you guys! This one is not complicated by any means, but just took a little thought to figure out how to make it. I created it last night and the entire family loved it – so enjoy!!

Fajita Ingredients:

½ Onion
½ Red Pepper
½ Yellow Pepper
½ Green Pepper
1 Garlic Clove
2-3 Chicken Breasts, cut lengthwise into long strips
Fajita Seasoning (homemade recipe below)
1 Lime
Tortillas (from the refrigerated section so they are very thin)
Olive Oil (to saute with)

Now I know you can buy a myriad of different kinds of fajita seasonings from the grocery store, but let me tell you something i’ve found out from my experience. They all taste very different, and sometimes they really won’t match your meal well. I searched and searched online to find a fajita seasoning mix that I could make easily and had all of the essential ingredients in it that I felt should be in there. This was the recipe I decided on and oh boy was it good!!! This recipe will make enough for you to keep in a container for a while, so its worth making if you have the ingredients on hand! *I simply added it all to my Ninja blender and pulsed it up into a fine powder since there are a few things that aren’t in powder form.

Fajita Seasoning Mix:

3 TBSP Cornstarch
2 TBSP Chili powder
1 TBSP Salt
1 TBSP Paprika
1 TBSP Sugar
2 ½  tsp Crushed Chicken Bouillon Cube (I used 2 cubes)
1 ½ tsp Onion Powder (or flakes if you plan to blend it all up)
½  tsp Garlic Powder
½  tsp Cayenne Pepper
¼  tsp Crushed Red Pepper Flakes
½  tsp Cumin

Making the dinner:

First sauté the chicken on medium-high heat with the fajita seasoning (I probably used about 1 TBSP), a little oil and 1/2 of the lime juice. Once you saute the chicken for about 5-6 minutes, you’ll add the pepper, onion, and garlic and squeeze the other ½ of the lime, then sauté everything for another few minutes until the peppers and onions are almost soft. Warm the tortillas in a separate pan and sprinkle a little water on each side of it to “steam” it as well – its super yummy that way!We like to top this dish with a little mexican cheese, salsa (or fresh pico de gallo), sour cream, avocado, and lettuce!
