Hearty Pasta Soup

Ive mentioned before that my husband is a very healthy eater, right? Well I’m the complete opposite! If I could eat bread and pasta every single day I would be one happy woman! I know I can’t though, and he knows that sometimes he has to concede to eat a *little* pasta with me (big emphasis on the *little*) so we have a great recipe thats quick and super yummy to share with you that we’ve tweaked from the original recipe, to our liking!

Hearty Pasta Soup:

1 TBSP Olive Oil
2 Carrots, Chopped
1 Onion, Finely Chopped
6 Cups of Vegetable Stock
1 – 14oz Can of Diced Tomatoes (plain), undrained
1/2 Cup of Frozen Peas
1/2 Cup of Frozen Green Beans
8oz of Cheese (or meat) Tortelloni
*Sprinkle Parmesan on the top*
Saute the onion and carrots in the oil for about 5 minutes until they start to soften. Then add them to the pot with the stock and tomatoes. Simmer the pot for about 10 minutes and then add the peas and beans and simmer for another 5 minutes (if you use frozen veggies it’ll take a few minutes to bring the water back up to simmering). Then add your pasta (returning it to a boil again) and cook it until its done (based on the back of the package). Serve with sprinkled parmesan immediately!
